Founders

 

Hi! Meet your hosts, Victoria and Jonathan, the founders of Grateful Meadows Micro-Sanctuary and Retreat Center based in West Point, Virginia. Their path to opening the retreat began when Victoria was in her senior year at Radford University, Virginia and took a course on how the human body processes food. She watched the documentary Forks Over Knives, read The China Study, and she was hooked! What she’d previously thought was a “healthy” diet of white meat (chicken) and dairy (a glass of milk with dinner) was challenged and she was shocked.

 

Seeing and really absorbing the evidence behind a plant-based diet changed the way she approached eating and health. Within a few weeks she was vegan, with Jonathan quickly following her lead by going vegetarian for a few months before transitioning to being vegan. Jonathan always jokes that “Tori became vegan…. soooo I became vegan” with a laugh but it really strengthened their commitment! While living in Norfolk, VA they began volunteering with various non profit groups.  Those experiences really opened their eyes to the benefits of volunteering, living with gratitude, and ultimately opened the door to them founding Grateful Meadows.
